Is it ok for your wine to taste like cat pee?
Well that depends.
If you are drinking a glass of Moscato or Chardonnay, throw out the wine in your glass immediately. If you are drinking a Sauvignon Blanc or a Cabernet Sauvignon it’s perfectly fine. Rest assured it’s not really cat pee, it just smells like it. The smell comes from a particular concentration in a sulfur compound found in the grapes called p-mentha-8-thiol-3-one.
There are actually people who really enjoy wines with this compound. A popular wine with this aroma is New Zealand’s “Cat’s Pee Sauvignon Blanc”.
