I really enjoy gifts of experiences with my family, and had seen articles about having a professional Chef come to your home and prepare a meal. I decided this was an experience I wanted to try. I ventured out with Google and located Chef Chaevis who was featured in the local magazine Lafayette River Friends & Neighbors. She has an inspiring life story that gives her a passion and appreciation in all that she does. Chaevis is determined and strives for excellence in every meal she prepares. Her enthusiasm definitely is transmitted into her cooking where she is committed to making every catered meal a moment of greatness.
From the get go Chef Chaevis was a pleasure to work with. I told her some of our favorite foods, but wanted her expertise to create the perfect menu for us. Chaevis made the process easy and was upfront with all prices (which were reasonable).
When the day finally arrived Chef Chaevis and her Sous Chef Jermaine arrived right on time with coolers, pans and all that was needed to create a delicious seven course meal. I set the table, provided plates, and the wine and drinks to accompany the dinner.
The course portions were ample and delicious. We had time to enjoy each course and have great conversation. It was so nice to enjoy my home and family without having to prepare the meal. The menu below was perfect.
The first course hors d'oeuvres featured spinach and parmesan stuffed mushroom caps. I was so excited to try these I had to eat one before taking the photo 🙂 They were warm right out of the oven, moist and full of flavor. A great choice for the start of the meal.
The second course featured roasted butternut squash and crab bisque. Lots of creamy flavor and goodness in every spoonful!
The third course featured an appetizer of Lobster mac and cheese. Yum!
The fourth course featured a traditional wedge salad with Blue cheese dressing. Almost too pretty to eat, but I did!
The fifth and main course was Beef Wellington with red potato puree. This was a large portion packed with flavor!
The sixth dessert course featured Southern blueberry cobbler. Absolutely delicious! I was really full at this point in the dinner but I ate every crumb because it was so delightful!
The seventh course Mignardise featured French cheesecake with sweet orange glaze. This was the perfect small bite to accent the blueberry cobbler. An exceptional way to end the meal.
The Beverages
We started the evening beverages with cucumber water and a sparkling Apple-Mango juice. We also enjoyed a 2016 Bolgheri, a "Super Tuscan" wine made with blended grapes like Cabernet Sauvignon, Merlot and the local grape Sangiovese! We also enjoyed an Amarone Della Valpolicells wine, one of my favorites.
At the end of the dinner I asked Chef Chaveis and Sous Chef Jermaine to join us so she could share a little on her passion for the culinary arts and exuberance for life. Her education, family, travels, turbulent life and faith have made her strong and successful with the ability to exceed expectations.
"The people who give you their food give you their heart." I absolutely feel Chef Chaevis gives all her heart in preparing a meal that will give you and your guests a moment of greatness to remember.
