Love Pizza & Hate Cauliflower?

One of the things I miss most on my low carb diet is bread.

But now I have a wonderful substitution to share with you!

There are several secrets on the Internet to delicious cauliflower pizza dough and bread, but my altered one is the BEST! Some of the suggestions are true, like making sure you squeeze all the water out of the cauliflower after you boil it. But to me it’s not only about the crunchiness of the crust. It’s also about the flavor. I personally didn’t like the crust recipe made with goat cheese. My secrets to amazing pizza crust is. . . so  easy, I use Parmesan cheese and it’s delicious.

When I told my husband Mike I was making cauliflower pizza he said that it sounded disgusting and that he didn’t want to try it. I basically had to forced him to try a piece. He looked at his slice of pizza like I had dragged it through the cat’s litter box. That’s how much he hates the taste of cauliflower. I saw him take his first bite to appease me. He remained emotionless as he took several more bites. Mike hates to admit he is wrong about anything. But when I saw him go into the kitchen for another piece I new he liked it. He had to admit that the pizza dough didn’t taste like cauliflower. Yes, the Parmesan cheese totally disintegrated the cauliflower taste.Cabernet Sauvignon Vinas Chilenas Trader-Joes

Do you like Red Lobster Cheese Biscuits? Well this recipe resembles them. If you want bread instead of Pizza just stop after the first baking. Cut your baked crispy bread into squares, put on a little butter and enjoy or put in a storage bag to use later.

Pair this with Trader Joe’s Vinas Chilenas Cabernet Sauvignon, it has smooth tannins, deep berry flavors with earthy undertones, a steal at only $4.49

Recipe:

Crust ingredients:

  • 1 bag frozen cauliflower (16 oz) (shredded in food processor)
  • 1 egg
  • 1 cup Parmesan cheese
  • 2 teaspoons Creole seasoning
  • 2 teaspoons garlic
  • 1 teaspoon Italian seasoning

Topping ingredients:

  • 1 cup Mozzarella cheese
  • ½ cup Parmesan cheese
  • 1 or 2 tomatoes
  • ½ pound ground turkey
  • ½ cup chopped peppers
  • 1 teaspoon each: Italian, basil, and thyme seasoning

Directions:

  1. Shred frozen cauliflower in food processor.cauliflower-grated
  2. Cook for 10 minutes in 2 inches of slowly boiling water.cook-cauliflower
  3. Pour cauliflower into a colander lined with a dish towel.dish-towel-cauliflower
  4. Drain ALL water out of cauliflower by twisting and squeezing towel.strain-cauliflower
  5. Chill cauliflower in the freezer for 10 minutes.
  6. Preheat oven to 400 degrees.
  7. Mix all ingredients together, cauliflower, egg, cheese, garlic & Creole seasoning.mix-spices
  8. Spread on a Teflon sheet.bake-dough
  9. Bake for 30 minutes.
    (you can stop here and use this as cheese bread or continue and use this a pizza crust), tastes like Red Lobster Cheese Biscuits. Cauliflower bread is served below with green beans, horseradish mashed potatoes and ham and . Trader Joe’s Vinas Chilenas Cabernet Sauvignon.

Even if you don’t like cauliflower give this recipe a try. It really doesn’t taste like cauliflower. It tastes like all the goodness of real pizza without the lump of gigantic flour-ball in the middle of your stomach.
