I am always on the lookout for a delicious & healthy, gluten free cookie recipe & wine pairing!
Delicious & healthy don’t usually go together, but these cookies are an exception to the rule. I was so happy to get this recipe from my daughter’s best friend Meagan (Thank you Meagan!). She made these cookies for Christen’s husband’s birthday and they were delicious.
I love that this recipe is fast, easy, and no bake. I tweaked this recipe a little to make it a bit healthier. The original recipe called for 2 cups of sugar. I switched the white sugar to brown and cut it to one cup instead of 2 then added honey and Stevia to make up the difference. I also switched out the regular milk to lactose free milk and rolled the cookie dough in cocoa.
Pair this recipe with:
- Madeira wine or (Portuguese sweet wine with coffee, raisin, caramel & almond flavors or
- Sparkling Rosé Wine

Cookie Recipe Instructions:
- Bring the following ingredients to a boil in a pan for one minute;
1 cup brown sugar
1/2 cup honey
2 tablespoons Stevia
1/4 cup cocoa
1/4 butter (optional: use half butter & half olive oil)
1/2 cup lactose free milk - Remove from heat, and stir in remaining ingredients;
3 1/2 cups of oatmeal
1/2 cup peanut butter
1 tsp. vanilla - Roll heaping teaspoons of batter into a ball
- Place onto waxed paper; allow to harden
- Optional – dust with cocoa
