My new chips – only 7 calories per cup

I’ve gained a few pounds and I need to get them off! When I’m happy I eat, and apparently I have been happy a lot lately! But I’m on a quest to shed some of these pounds. I have been searching for a replacement for my “salty” and “sweet” habit. And I think I have found my “salty” solution, it’s “Italian Seasoning Spinach Chips” my new replacement for potato chips. This may sound weird to some of you but please give them a try because they are delicious!

I have tried kale chips but no matter how I fixed them, they always tasted horrible to me. But spinach is different, it tastes great when baked with Italian seasoning and course sea salt. I did have a problem with recipes I found for spinach chips on the web. They tell you to put the spinach leaves on foil coated with non-stick spray. Well most of my chips stuck to the foil and it was really frustrating trying to get them off. Here is my secret to perfect spinach chips; instead of putting the spinach leaves directly on the foil, put them on a cookie cooling rack, coated with non-stick spray. When your chips come out of the oven – Whala, the chips come right off.

This is the easiest recipe ever and it only takes 9 minutes to cook.

Take 2 cups of spinach and spray it lightly with a no calorie non-stick spray. Next sprinkle McCormicks Italian Seasoning and sea salt on the spinach. Mix everything together gently, then spray the cooling rack with the non-stick spray, and lay the spinach on it. Make sure you don’t overlap the leaves. Bake at 325 for 9 minutes. The leaves will have shrunk and will be very thin and crunchy. 

I tried this recipe for the first time yesterday and I’ve made 4 batches of these chips and have eaten them all!!!! Only 56 calories!!!!

Also – these chips pair really well with a glass of Sauvignon Blanc (80 calories)!
